Transitioning from a traditional American diet to a plant-based diet was a challenge for me. I feared giving up foods I grew up with and loved. I feared never enjoying a meal again. To be honest, when I made the switch completely, I did struggle to find meals I loved. Thankfully, my wife and I survived.
Along the way, we found many great recipes. I want to share a delectable and simple recipe. If you think you are going to miss burgers when eating a plant-based diet, think again. These are the best plant-based burgers I have ever had. Consider making these burgers for your next summer dinner and you have a meal made to be shared and enjoyed.
Black Bean Burger
Makes 8 patties
Ingredients

1 carrot, finely chopped

1 celery stick, finely chopped

1 red bell pepper, finely chopped

1/2 medium onion, diced

5 cloves garlic, minced

3 cans black beans, drained and rinsed

1 cup oat flour

1.5 Tbsp chili powder

1.5 Tbsp cumin

2 Tbsp soy sauce
Instructions

Preheat the oven to 375°F.

Sauté the carrot, celery, bell pepper, onion, and garlic in a large pan on medium heat with a little water for about five minutes until tender.

Mash the beans thoroughly in a large mixing bowl. Then add in the rest of the ingredients along with the sautéed veggies and mix together until well combined.

Scoop about 1/2 cup of the mixture into your hands to form into flat patties and place on a baking sheet lined with parchment paper. Bake for about 10-15 minutes, then flip the patties and cook for another 10-15 minutes.

Serve warm with a toasted bun, condiments, and sliced vegetables.
