Ingredients

Blend the following ingredients in a food processor until smooth.

  • 1/8 cup olive oil
  • 1/4 cup molasses or honey
  • 1 1/2 cup pitted dates
  • 1 1/2 cup plant-based milk
  • 1 teaspoon vanilla
  • 1 1/4 cups of almond flour
  • 1 1/4 cups rice flour
  • 1/4 tsp. salt
  • 1 tsp. ground ginger
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cloves

Directions

Stir dry ingredients together. Add mixture from the food processor. Roll out between parchment paper to 1/4 inch thick and cut into desired shapes, using more rice flour if needed. Transfer to a parchment-lined baking sheet. Bake at 350 degrees about 12 minutes. Let cool in pan. Store in an airtight container.
